It’s fun for me to watch someone like the soba noodle chef at work – everything in Asian cooking is different from western cooking and it can be humbling to watch. I was hesitant to try it, but at the chef said to me, put your hands in and go! That for me again was that feeling of being in the moment. Those were the best soba noodles I’ve ever had! The texture was silky; the taste of the buckwheat was not too strong but there was a depth of flavor that hits you when you eat them.
